About your host, Mamma Corleone: Maria Pia is a Sicilian mamma, a mother of 4, that has an authentic experience in cooking traditional Sicilian dishes. Her cooking abilities are very popular among her friends and the customers of Mamma Corleone. There she's known as a great teacher, specializing in street food recipes.

The eggplant caponata is one of the milestones of Sicilian gastronomy. It is a set of vegetables (mostly aubergines), seasoned with tomato sauce, celery, onion, olives and capers, in sweet and sour sauce. There are more than forty different versions and it is cooked in the season when the aubergine is at its fullest potential. Many families prepare and store the caponata in glass jars, so that they always have this great apetizer at home.
